Description

Origin and Selection:

The meat is sourced from the Kyoto Meat Market, the legendary hub of the Japanese Wagyu trade. Each ribeye is evaluated based on color, structure, marbling, and the quality of intramuscular fat. Only a fraction of carcasses in Japan achieve the A5 | BMS 12 standard.

The Ribeye from this batch was hand-selected and personally approved by Joachim Bobek to represent the highest possible level of quality, aesthetics, and taste. After selection, the meat underwent 45 days of wet-aging, which brings out its full depth of umami and a silky texture.

Japanese Black (Kuroge Washu) – The Heart of True Wagyu

This ribeye comes from the Japanese Black (Kuroge Washu) breed, recognized as the finest cattle in the world. Kuroge Washu has a unique ability to create finely dispersed intramuscular fat that melts at just 27–28°C. It is this trait that gives the meat its legendary marbling, creamy texture, and buttery umami flavor. The fat of this breed contains high levels of monounsaturated fatty acids (MUFA), responsible for its clean, sweetish flavor profile and the “melt-in-the-mouth” effect.

Types of Meat Cuts:

1. Steak Cut: Classic Steak Cut

The most traditional form of ribeye preparation. The meat is cut perpendicular to the fibers into slices, ideal for frying or grilling. This cut allows for intense external caramelization (crust) and a juicy interior—classic “medium-rare perfection.”

  • Ideal for: Grill, cast-iron skillet, or oven with a temperature probe.
2. Yakiniku Cut: Thin Slices (2–3 mm)

Yakiniku (焼肉) literally means “grilled meat”—it is the Japanese way of serving Wagyu in the form of delicate, thin slices 2–3 mm thick. The cut is made at a slight angle to the fibers, increasing the surface area and allowing for an instant sear (10–15 seconds per side).

  • Ideal for: Japanese grill, plancha, or fine-dining home tasting.
  • Result: The meat is juicy, aromatic, and soft as butter.
3. Shabu Shabu Cut: Ultra-Thin Slices (1 mm)

Shabu Shabu (しゃぶしゃぶ) is a traditional way of serving Wagyu in paper-thin slices (approx. 1 mm). The meat is cut while semi-frozen to maintain perfect shape and fiber structure. These slices are dipped for literally a few seconds into dashi or kombu broth, where the Wagyu fat slightly dissolves, giving the soup a creamy, buttery character.

  • Ideal for: Shabu shabu, sukiyaki, ramen, or fine-dining tastings.
