All Wagyu A5 tenderloin steaks are fully trimmed, with no silver skin, excess fat or side chain. You receive a perfectly prepared, clean-cut beef tenderloin steak, ready for premium culinary use.

Tenderloin is the most delicate and refined steak cut. Taken from the lumbar muscle, Wagyu A5 tenderloin contains virtually no connective tissue, membranes or sinews. The version selected by Onishi and Meat Japan combines an exceptionally silky texture with very high marbling and a flavour that lingers long after the final bite.

Its buttery structure, aromatic fat and subtle sweetness with nutty undertones result not only from prized Kuroge Washu genetics, but also from meticulous husbandry and a carefully balanced diet based on rice, soy and corn, with natural additions such as seaweed and sesame.

Origin and selection, Meat Japan and Onishi

Meat Japan is a European brand created by one of Japan’s most prestigious butcheries, Ginkakuji Onishi, operating in Kyoto since 1953. Each year, the company evaluates more than 10,000 Wagyu cattle, selecting only animals with outstanding genetic quality, tenderness and flavour.

The cattle are raised for over 700 days in low-stress conditions, including bedding made from Japanese hinoki and sugi wood, and without the use of hormones or antibiotics. Onishi Wagyu fat is renowned for its distinctive aroma, with notes of coconut, nuts and vanilla, and for a melting point that begins at body temperature.
