Wagyu A5 BMS12 fillet steak from Japan represents a rare convergence of three exceptional qualities: the most delicate beef cut, the highest possible level of marbling, and deep, complex flavour developed through 55 days of dry ageing. The tenderness of tenderloin, the richness of BMS 12, and the aromatic depth created by extended ageing are seldom found together, even within the world of Japanese Wagyu.
This limited New Year’s Eve batch was prepared exclusively for BeeF-Atelier. Each piece was selected from the finest Japanese Wagyu lots and personally approved by Joachim, founder of BEEF.PL and BeeF-Atelier. The meat was then dry-aged for 55 days, allowing intense umami to develop alongside a silky, creamy texture. Extended ageing introduced refined nutty notes and a mature, elegant aroma, making every bite a truly distinctive experience.
No one had previously dared to dry-age Wagyu A5 BMS12 fillet steak. Until now.
The combination of Wagyu A5 BMS12 tenderloin and 55 days of dry ageing represents the essence of true luxury. The meat melts in the mouth, delivering layers of buttery richness, subtle nuttiness, and a long, lingering umami finish. Origin: Miyazaki Prefecture and Kyoto Meat Market
Miyazaki Wagyu is among the most prestigious Wagyu lines in Japan and has been repeatedly awarded at the Japan Wagyu Olympics. Breeding in Miyazaki Prefecture is carried out with exceptional attention to Kuroge Washu genetics and a carefully controlled diet based on natural grains, rice, and maize.
The beef is then sent to the Kyoto Meat Market, where it undergoes precise grading. The highest classification, A5 with BMS 12, confirms ideal fat distribution, exceptionally fine muscle fibres, perfect colour and texture, and a creamy fat structure with a very low melting point.
55-day dry ageing:
Each tenderloin was dry-aged for 55 days under strictly controlled temperature and humidity conditions. Dry ageing Wagyu is a demanding process that requires experience and precision. Too short and the flavour remains underdeveloped. Too long and the delicate structure may be compromised.
The result is concentrated umami, deeper notes of nuts, cheese, and butter, a refined tenderness with remarkable creaminess, and a naturally aged aroma noticeable from the very first cut.
