Smoker and BBQ Low & Slow

Remove excess hard fat from the surface and pat the meat dry with paper towels. Season with salt, freshly ground pepper, or your favorite beef rub.

Smoke at approximately 110–125°C, ideally using oak, hickory, or cherry wood. The ribs are ready when a meat thermometer probe slides through the meat with minimal resistance – typically around 92–96°C internal temperature.

After cooking, let the meat rest for at least 30 minutes.

Oven
