Origin and philosophy of Miguel Vergara:
Miguel Vergara is a benchmark for premium Angus beef in Spain, built on decades of experience, precision farming, and full control of the production cycle. His farms in León and Salamanca oversee every stage, from pasture and grain finishing to dry ageing.
Cattle begin life on open pasture before transitioning to a grain-based diet for approximately 300 days, using cereals and forage grown on the estate. This approach develops marbling and balanced fat distribution characteristic of high-quality Angus.
After harvest, the beef is dry-aged for 60 days under strictly controlled conditions. Time concentrates flavour and develops aromas of nuts, butter, and dried fruit. Every T-bone reflects Spanish craftsmanship and respect for meat produced slowly and deliberately.

How to cook?
- Defrost in the refrigerator for 12 hours before cooking.
- Pat dry with kitchen paper.
- Season with sea salt just before searing.
- Grill or cook in a cast-iron pan for around four minutes per side for medium-rare.
- Rest for five to seven minutes.
- Slice along the bone and serve on a board with herb butter or fleur de sel.

How does T-bone differ from Porterhouse?
