Description

RibEye from Jersey cattle is a steak like no other. It comes from cattle raised sustainably. No rush, no antibiotics, no chemicals. Jersey cows are renowned primarily for their exceptionally rich and nutritious milk, but this very characteristic translates directly to the quality of their meat: natural marbling, complex flavor, and remarkable structure.

Jersey breed – hidden strength in delicate refinement

The Jersey breed originates from the Norman Isles (present-day Jersey, Great Britain), where it has been prized for centuries for its milk with high fat content and distinctive golden color. This same characteristic carries through to the meat, as the fat displays a creamy hue, silky texture, and exceptional aroma.

Although Jersey is not a typical beef breed, beef from properly raised, mature Jersey cows produces an exceptionally noble and complex flavored product, often compared to slow-raised Iberian breeds or dairy-type cattle such as Montbéliarde.

What can you expect from Jersey RibEye BMS 5+?

Flavor:

  2. dairy notes, delicate sweetness,
  3. nutty finish – subtle as almonds and hazelnuts,
  4. fat with a clarified butter profile, melts at the slightest warmth, imparting a rich buttery aroma throughout.

  2. pale golden fat, exceptionally soft, rendering quickly,
  3. When seared, it delivers a juicy, aromatic interior with a thin, crispy crust.
Structure and texture:

  3. excels as a steak because it’s easy to work with and difficult to overcook.

How to prepare?

  1. Medium rare (54–56°C) is optimum, as it highlights all the flavor qualities.
  2. Best seared in a cast iron skillet or on the grill for 2.5–3 minutes per side.
  3. Rest: minimum 5 minutes after cooking.
  4. Serve with minimal accompaniments: Maldon salt, pepper, perhaps a touch of herb butter.
