Known as “The Pope’s Salt” because it was historically presented to the Pope and used at the papal table, it remains to this day a mark of the highest quality and an exceptional cultural heritage.
Origin and history:
The Salina di Cervia is located on the Adriatic Sea and is the northernmost salt pan in Italy. It is this specific geographical location, the climate, and the design of the salt basins that give Cervia salt a completely different character from most sea salts in the Mediterranean region.
For centuries, the first, purest batches of salt were offered to the Pope as a symbol of quality and respect, hence the term “sale dei papi.” This tradition survives to this day, and Cervia salt is recognised as a luxury product with an extraordinary lineage.
Production method:
Cervia salt is a true whole-grain sea salt:
- it comes directly from the waters of the Adriatic Sea,
- seawater is introduced into the salina through supply channels,
- it is then evaporated solely by the sun and the wind,
- salt crystallises naturally in the basins,
- after harvesting, it is washed exclusively with high-concentration salt water (so-called mother water), rich in trace elements,
- it is then dried on the floor in traditional salt heaps.

- it contains no anti-caking agents.
Thanks to this, it retains its natural moisture, colour, and the full range of its properties.
Why is Cervia salt “sweet”?
The sweet taste of Cervia salt results from a combination of geographical, climatic, and chemical factors.
This salt consists mainly of pure sodium chloride, with minimal content of bitter chlorides such as:
- magnesium chloride,
- potassium chloride,
- magnesium and calcium sulphate.
It is these compounds that are responsible for the bitterness found in many sea salts. In Cervia salt, their amounts are trace, ensuring that:
- the taste is mild and clean,
- there is no aggressive saltiness,
- the salt dissolves quickly,
- it does not dominate the dish but enhances it.
Natural moisture and the absence of artificial drying make the salt easily absorbed and delicate on the palate.
Properties and mineral composition:
Cervia Sweet Salt is unrefined and whole, rich in natural trace elements present in the mother water, including: iodine, zinc, copper, manganese, iron, calcium, magnesium, and potassium.
