Salina di Cervia “Pope’s” sweet sea salt, coarse-grain BIO grinder 95g

Description

Classic Italian craftsmanship in a form perfect for steaks

Cervia Sweet Sea Salt, known as “The Pope’s Salt,” is one of Italy’s most esteemed salt products. This coarse-grain version in a BIO grinder combines centuries of tradition with modern functionality. It allows you to grind salt directly onto the dish, precisely at the moment of service.

This is a salt with a mild, clean, and naturally sweet taste, free from bitterness, created for premium cuisine – particularly for steaks, grilled meats, tartare, and finishing dishes just before serving.

Origin and history: Cervia, Emilia-Romagna

The Salina di Cervia is located on the Adriatic Sea and is the northernmost salt pan in Italy. For centuries, salt has been the foundation of life and a key element of local identity here.

The nickname “The Pope’s Salt” stems from the historical custom of presenting the first, purest batch of salt to the Pope in Rome. Cervia salt graced the papal table as a symbol of quality, gratitude, and prestige. This tradition survives today and continues to define the product’s standing.

Natural production process

Cervia salt is a true whole-grain sea salt, produced in a completely natural way:

  • Adriatic seawater enters the salina through supply channels,
  • it is evaporated solely by the sun and wind,
  • salt crystallises in the basins,
  • after harvesting, it is washed exclusively with high-concentration salt water (mother water), rich in trace elements,
  • it is dried naturally on the floor in characteristic salt heaps,
  • it is not industrially crushed or ground,
  • it is not kiln-dried,
  • it is not chemically bleached,
  • it contains no anti-caking agents.

Thanks to this, it retains its natural moisture, colour, and full range of mineral properties.

Taste and character – why is Cervia salt “sweet”?

The “sweet” taste of Cervia salt results from a unique combination of:

  • geographical location,
  • the specifics of the Adriatic Sea,
  • the design of the salt basins,
  • and the traditional, slow production process.

This salt consists primarily of pure sodium chloride, with minimal content of bitter chlorides such as magnesium and potassium chlorides or sulphates. The result is:

  • an absence of bitterness,
  • a soft, mild saltiness,
  • rapid dissolution on dishes,
  • perfect enhancement of flavour without dominating the dish.

Mineral composition and properties

Cervia Sweet Salt is unrefined and whole, rich in natural trace elements present in the mother water, including: iodine, zinc, copper, manganese, iron, calcium, magnesium, and potassium. These ingredients are why Cervia salt is also used in local wellness lines and health products.

Culinary application:

The coarse-grain version in a grinder allows you to release the maximum aroma at the moment of serving:

  • perfect for premium steaks (Wagyu, Angus, aged beef),
  • ideal for tartare and carpaccio,
  • excellent for grilled meats, fish, and seafood,
  • great as a finishing salt just before service,
  • works well in creative and modern cuisine.

The grinder provides full control over the coarseness of the grind and the amount of salt used.

Packaging and storage:

  • Weight: 95 g
  • Form: coarse-grain
  • Packaging: BIO grinder

Due to its natural moisture, the salt may clump slightly over time. This is a characteristic of an authentic product, not a defect. The grinder easily handles the natural structure of the crystals.
