History and origin
The salt originates from the salt pans of Cervia (Emilia-Romagna, Adriatic coast), a location with a centuries-old tradition of salt harvesting. The nickname “sale dei papi” (“Pope’s salt”) stems from the ancient custom of presenting the Pope with the first, purest batch of the harvest; this tradition has been officially revived in recent decades and remains a core element of the region’s identity.
Taste and texture:
What sets Salfiore apart is its exceptionally clean, mild profile:
- “sweet” taste without bitterness: Cervia Sweet Salt consists primarily of sodium chloride, with a very low proportion of bitter compounds (such as magnesium and potassium salts),
- natural moisture of approx. 2%: thanks to natural drying, the salt is slightly moist, dissolves faster on hot meat, and provides a “softer” saltiness,
- fine-grained and delicate: it adheres perfectly to the surface of a steak and seasons it evenly.
How it is made:
Salfiore is produced traditionally: the salt is harvested and rinsed with high-concentration salt water (brine), then naturally dried without chemical processing or additives. This allows it to retain the natural properties and trace elements present in seawater.
Application in premium cuisine:
This is a salt created for meat, especially when precision seasoning is paramount:
- premium steaks: sprinkle at the end, just before serving (finishing salt), to enhance the aroma without dominating the meat,
