Salina di Cervia sweet sea salt is one of the most exceptional salt products in Europe – not only because of its flavour, but primarily due to its history, craftsmanship, and authenticity. It is a salt backed by a multi-generational community for whom salt extraction was and remains a core element of identity, labour, and regional pride.

It is called “Pope’s salt” because, historically, the purest batch of salt from Cervia was presented as a gift to the Pope and used at the Papal table. To this day, this symbolic tradition serves as confirmation of the product’s highest quality and prestige.

Origin – Cervia, Emilia-Romagna

The salt pans in Cervia, located on the Adriatic Sea, are the northernmost salt pans in Italy.
Specific geographical conditions, the climate, and the construction of the salt basins give Cervia salt a completely different character than typical sea salts.

It is here that for over two thousand years, salt has been extracted in a traditional, slow, seasonal, and fully natural way.

Natural Production Process

Salina di Cervia is true whole-grain sea salt, produced without any chemical interference:

  • Seawater from the Adriatic enters the salt pans through supply channels,
  • It is then evaporated solely by the sun and wind,
  • Salt crystallizes naturally in the basins,
  • After harvesting, it is washed only with water of a high salt concentration (so-called mother water), rich in trace elements,
  • It is dried naturally on the floor in characteristic salt heaps.

The salt is:

  • Not ground or crushed,
  • Not kiln-dried,
  • Not chemically bleached,
  • Free from anti-caking agents or additives. 

As a result, it retains its natural moisture, colour, and full mineral properties.

Taste and Character – Why is Cervia salt “sweet”?

The sweet, mild taste of Cervia salt results from a combination of geographical, climatic, and chemical factors.

This salt consists mainly of pure sodium chloride, with a very low content of more bitter compounds (chlorides and sulphates of magnesium, potassium, or calcium).

The effect:

  • No bitterness,
  • Soft, clean saltiness,
  • Dissolves quickly on food,
  • Perfectly highlights flavour without dominating the dish.

Its natural moisture makes the salt easy to use and gentle on the palate, even in everyday cooking.

Mineral Composition and Properties:

Salina di Cervia salt is unrefined and wholesome, rich in natural trace elements present in the mother water, including:
