Ribeye Whispering Dunes is an exceptionally juicy Wagyu ribeye from Namibia. This meat is the result of crossing Japanese Black genetics with Sanga cattle bred for Africa’s harsh climate. The outcome is a Wagyu with outstanding marbling, exceptional tenderness, and an intense yet beautifully balanced flavor profile.

Marbling at MS 7–8 indicates a generous amount of delicate intramuscular fat. As it cooks, this fat melts into the meat, imparting a buttery juiciness, velvety texture, and long-lasting umami richness.

Remove the meat from its packaging and pat thoroughly dry with paper towels. Season with salt just before cooking or well in advance, then sear in a preheated pan or on the grill.

With MS 7–8 marbling, additional fat is rarely needed. The intramuscular fat will render naturally during cooking, basting the steak from within.

For 350 g and 500 g steaks, sear both sides until your desired doneness is reached. Larger cuts of 1 kg and 2 kg are best prepared using the reverse sear method: slow-roast at approximately 100–120°C, then finish with a quick, hard sear in a hot pan or on the grill.

Recommended doneness: medium rare, approximately 54–56°C internal temperature.

After cooking, let the steak rest for a few minutes to allow the juices to redistribute throughout. Before serving, slice against the grain and finish with fleur de sel.
