Description

Ribeye from a Polish premium heifer sourced from the farm of Mr Marek in the Podhale region and hand-selected by Joachim Bobek. This limited BeeF Atelier Certified Cut is wet-aged for 35 days and stands out for its exceptional marbling and remarkable juiciness.

Ribeye from a Polish premium heifer is a tribute to craftsmanship passion and the quality of local farming. The beef comes from a small family-run farm in Podhale where tradition meets a modern and responsible approach to cattle breeding.

Hand-selected by Joachim Bobek and wet-aged for 35 days this steak is distinguished by beautiful fat distribution a buttery and nutty aroma and a level of juiciness that is unmistakable and impossible to confuse with any other Ribeye.

Origin: Podhale Poland:

In the heart of the Podhale region where the air carries the scent of grass and cattle graze freely on mountain meadows some of the finest Polish beef is produced. Mr Marek’s farm is a family operation where quality and ethics take precedence over scale.

The animals are fed grain hay alfalfa and feed sourced from the farm’s own fields. This balance of nature patience and dedication results in beef with a clean flavour and an ideal structure.

Angus and Hereford breeds:

The beef comes from Angus and Hereford cattle two of the most respected beef breeds in the world.

Angus contributes deep intense beef flavour and natural marbling that melts during cooking creating rich buttery juiciness. Hereford adds subtle sweetness and fine muscle fibres keeping the meat exceptionally tender and refined.

Together these breeds deliver full flavour balance between fat and muscle and a distinctive aroma that defines this Ribeye.

Ribeye the king of steaks:

Ribeye is one of the most sought-after beef cuts worldwide prized for its structure and character. It comes from the rib section and includes the longissimus dorsi muscle which is soft and tender as well as the spinalis dorsi also known as the ribeye cap the outer portion with a more pronounced beef-forward flavour.

This structure gives Ribeye its signature juiciness tenderness and depth of flavour supported by even marbling that melts during cooking and coats the meat in aroma and buttery softness.

Why it is so highly valued?

  • rich full umami flavour
  • exceptional juiciness and tenderness
  • perfect balance between fat and muscle
  • versatility for grilling pan-searing or sous-vide
