1) What exactly does “Black Label” mean in this product?

It is a premium selection; batches are chosen specifically for steak quality: marbling, structure, and consistency. There is less “lottery” in the package and more of a predictable result in the pan.

2) How does this RibEye differ from cheaper Brazilian RibEyes? Primarily in three ways:

  • superior and more even marbling,
  • a more stable meat structure,
  • consistency (meaning you get the same result with every order).

3) Does grain-fed mean the steak is fatty?

Not necessarily “fatty,” but it will be juicier and “buttery” on the palate. The intramuscular fat is there to create flavour and texture, not to be heavy.

4) What degree of doneness do you recommend for RibEye?

The safest and tastiest is medium-rare. This is when the marbling melts while the meat remains succulent. Medium is also excellent if you prefer a less “bloody” finish.

5) How can I avoid a “grey” steak without a crust?

Two conditions:

  • the pan/grill must be truly hot,
  • the steak must be dry on the surface (pat dry with paper towels).

This is enough to create a strong crust without overcomplicating things.

 

6) Salt before or after frying?

For this type of steak: just before frying. After resting, you can add a touch of finishing salt if you prefer a more “restaurant-style” effect.

7) Can it be prepared without a thermometer?

Yes. The simplest method: sear it quickly and intensely, then let it rest.

However, if you frequently cook premium steaks, a thermometer truly makes a difference in consistency.

Perfectly. RibEye is practically made for the grill because the marbling protects the meat from drying out and builds flavour.

The best approach is: short sear + bringing to temperature in an indirect zone.

9) Can it be frozen?

Yes. Ideally in the original vacuum packaging. Thaw slowly in the fridge and prepare within 24 hours after thawing.

10) What should I serve it with to not spoil the quality?

Keep it simple:

  • potatoes (puree/roasted),
  • green vegetables,
  • herb butter or just olive oil and finishing salt.
  • Avoid heavy sauces that will mask the flavour.

11) Is this a good choice for a “first premium steak”?

Yes, because it is a forgiving product: the marbling helps maintain succulence and allows for minor errors. It is a great entry point into the premium segment.

12) How to store after opening the vacuum seal?

Once opened, it is best to prepare the steak the same day. If necessary, transfer to an airtight container and keep at 0–4°C for a maximum of 24 hours.
