RibEye Wagyu A3 BMS5 | Japan | Miyazaki Prefecture
Price range: 83,99 € through 369,99 €
Description
Not everyone is chasing the extreme marbling of A5 BMS 12.
Wagyu A3 from Miyazaki is a completely different experience—more balanced, more “meaty,” yet still exceptionally juicy and distinctly authentic Japanese Wagyu.
This is a steak that lets you experience:
- the natural sweetness of Wagyu fat,
- creamy umami richness,
- yet also a pronounced, clean beef flavor.
With lower marbling than A5, the RibEye A3 delivers a more classic steakhouse experience and excels as a full-sized, completely satisfying steak.
Miyazaki Prefecture
This beef comes from Miyazaki, recognized as one of Japan’s most prestigious Wagyu production regions.
Miyazaki is renowned for:
- rigorous genetic selection,
- exceptional breeding standards,
- stress-free animal husbandry,
- superior intramuscular fat quality.
Miyazaki beef consistently wins top awards at Japan’s most prestigious Wagyu competitions.
What is Wagyu A3?
Wagyu is graded on two systems:
- A/B/C – carcass yield,
- 1–5 – meat quality.
A3 grade means:
- superior carcass yield (“A”),
- exceptional meat quality (“3”),
- moderate, beautifully balanced marbling.
Perfect for those who:
- want to experience authentic Japanese Wagyu,
- but prefer a more classic steak profile over the extreme richness of A5.
Flavor profile:
- buttery, yet never heavy,
- distinct umami,
- subtle sweetness of the fat,
- pure, elegant beef character.
Texture:
- exceptionally juicy,
- incredibly tender,
- more “steak-like” than A5,
- ideal for traditional steak enjoyment.
RibEye A3 lets you savor a generous portion of Wagyu without any sense of heaviness.
Why RibEye?
RibEye is the world’s most celebrated steak cut.
It combines:
- intense, bold flavor,
- natural juiciness,
- the perfect balance of meat and fat.
In Miyazaki Wagyu form, it delivers:
- profound aromatic depth,
- flawless caramelization on pan or grill,
- remarkably complex flavor even with minimal seasoning.
How to Best Prepare Wagyu A3
NOTE: The 400g cut may be thinner than expected due to the size of the RibEye section. To maintain weight, we cut it to a thinner thickness.
Pan or Grill
- Pat the meat completely dry.
- Season with salt just before cooking.
- Sear on a very hot surface:
- approximately 60–90 seconds per side (depending on thickness).
- Rest for 3–5 minutes.
👉 Wagyu A3 needs minimal embellishment.
Quality salt and high heat are all you need.
Recommended doneness
- Rare: 48–50°C
- Medium-rare: 50–54°C
Beyond medium, Wagyu begins to lose its signature tender texture.
