Australian Fillet Steak

Price range: 36,00 € through 58,00 €

Premium beef tenderloin steak from Australian Black Angus cattle, wet-aged for enhanced tenderness. Valued for its naturally soft texture, subtle flavour and smooth, even structure, it offers a balanced combination of juiciness and delicacy. This cut is ideal for those who appreciate tender, lightly marbled beef with a clean, refined profile.

Description

Our premium beef tenderloin comes from Australian Black Angus beef, a cut that has long held its place on the menus of leading restaurants worldwide. With minimal muscle fibres, no membranes and a balanced level of marbling, it delivers a consistently smooth, silky texture. This is a steak that cooks evenly and offers a clean, precise eating experience.

Angus cattle are raised in open environments, away from intensive industrial farming. A controlled grain-fed programme lasting 120 to 150 days allows the meat to develop a fine structure and a naturally buttery fat profile that does not require heavy seasoning.

Why choose beef tenderloin?

Because it is the most refined and versatile cut:

  • Naturally tender, even for those who usually do not enjoy steaks.
  • Light, elegant and well-suited to refined dishes.
  • Ideal for filet mignon, tournedos or sous-vide preparation.

What can you expect?

  • Texture: exceptionally soft, with no sinews or membranes
  • Flavour: clean and delicate, supported by subtle creamy fat notes and natural umami
  • Consistency: high repeatability in appearance, structure and taste
  • Ease of preparation: forgiving and reliable, even for less experienced cooks
