This caviar doesn’t happen by accident!

It comes from our own sustainable farm in Poland, where sturgeons mature at a natural pace. Every batch undergoes hand-selection and rigorous quality control.

The Antonius Star System – what does it really mean?

In Antonius caviar, the number of stars is not marketing. It’s a real quality grading system, based primarily on grain diameter, fish age, and flavor depth.

  1. 4★ (2.4–2.6 mm)
  2. Classic profile. Most versatile, clean taste – ideal for first discovery and regular enjoyment.
  3. 5★ (2.6–2.7 mm)
  4. Larger pearls, silkier texture, and more intense aroma. A noticeable quality upgrade.
  5. 6★ (>2.7 mm)
  6. Largest grains, most mature fish, most complex and rounded profile. Fine dining and top restaurant segment.

In practice: the more stars, the larger the grain, stricter the selection, and more luxurious the experience.

How to Serve (Premium Experience)

  1. Serve caviar in a glass or crystal vessel, or directly in the tin, placed on crushed ice.
  2. Use only mother-of-pearl spoons or neutral materials.
  3. Avoid metal, as it can alter the taste.
  4. Open the tin just before serving. Caviar is sensitive to oxidation and quickly loses its structure.

Tasting Ritual:

  1. Place a small portion on the back of your hand.
  2. Wait a few seconds for your skin warmth to release the aroma.
  3. Taste and let the grains gently burst on your palate.
