Recommended preparation:

  1. Remove from the fridge at least 1 hour before cooking.
  2. Pat dry, season with salt and sear on a very hot pan, such as cast iron.
  3. Finish in the oven at around 100 to 120°C until the desired internal temperature is reached.
  4. Rest for 5 to 10 minutes under foil to allow the flavours to fully develop.
